Colombia is best-known for its Washed coffees. While the processing details might vary slightly from farm to farm or by association, generally the coffee is picked ripe and depulped the same day, then given an open-air fermentation in tanks/ buckets for up to 36 hours. The coffee is washed clean of its mucilage before being dried either on patios.
This coffee really shows off as a filter brew and is quite forgiving in its brewing parameters. From the moment you bring your favorite coffee mug to your mouth you are greeted with an incredibly pleasant honeysuckle floral note that makes your mouth water for the simplistic chocolate note that floods in. As you finish your sip the transition to a dried dark fruit shows up as a perfect palm date.
